First taste of my rosé.

Started my 50th birthday off right with a tasting of my new rosé, the first of its kind in Ontario. Made from the Dornfelder grape that my father knew from his homeland Austria. He used the grape to produce one of Canada’s first red Icewines as he was drawn to its deep dark colour, intense fruity flavours and bright acidity. For my rosé, the juice was pressed immediately and skin contact was minimal. The result an intense deep pink hue to the wine and bright raspberry flavours on the nose and palate. Fermented bone dry, of course!
